We believe that our holistic and transparent practices allow for every element of our process to surface. Ceres Estates owns and operates two farms, Finca Las Marias and Finca Las Mercedes. Both farms are characterized by three key elements: shade grown specialty coffee varietals, high altitude, and fertile volcanic soils. We take extraordinary care of our trees and our math is simple: healthy beans come from healthy trees which flourish in healthy soils.
FINCA LAS MERCEDES
At Finca Las Mercedes we grow SHG Bourbon, renowned for its sweet, fig like notes and brightness. Since our coffees mature at a slower pace under the shade, natural sugars increase and enhance their flavor profile, bringing forward a balanced and smooth texture with a sweet just-right finish.
Ceres Estates, our coffee is cared from tree to mill to port, ensuring a high level of quality control. We are constantly experimenting with innovative processing techniques to create new flavor profiles in relation to fine acidity, unique aroma and a balanced body.
